Holiday mash up – potato pizza

For some reason, Easter this year no longer means “chocolate” to me. Now that doesn’t mean I’m eating healthier, but to make up for my lack of serious chocolate intake I’ve realised it’s all about just sitting back and enjoying the fact that I have a few days all to myself to do whatever I want.

So…this means eating a lot of cheese, a lot of greasy potato, and some sort of fresh herb to bring it all together (except maybe my potato chip breakfast this morning…). Basically, get last night’s leftover mashed potato, mix in a bit of salt and pepper, fresh chopped dill or chives (or whatever herb really), and minced garlic. Any combination will do. Preheat your grill (broiler) to 200C (400F). Heat up some oil or butter on medium high heat in a cast iron pan, dump the mashed potato and shape into a large pattie.  Let cook for about 5 minutes until the bottom is nice and golden. Top with cheese (to make it really pizza-y, you can squirt some tomato sauce on first, then top with sliced mushrooms or something), shove under the grill until the cheese is golden to your liking. Eat. Om.

If you want to add a breakfast twist, crack an egg or two on the potato base straight after laying down the mashed potato, then cover. If still not cooked throw under the grill. Sprinkle with more salt and fresh herbs after to serve.
